Awesome Grilled Striped Bass Recipe

Filleting Striped Bass at the end of a tiring trip, on a pitching moving boat, utilizing  an undersized cutting board, using the sharpest knife in my arsenal, usually brings about one question from our customers. And it’s not, “why don’t you clean the fish at the dock?”(We can’t, harbor rules). The thought process must be, “what on earth are we going to do with all this fish?” This eventually translates into the question most frequently asked. Do you have a favorite recipe? Of course! We love grilled Striped Bass in the Summer. What follows is my favorite way to serve Striped Bass. I hope you enjoy it.

1)Remove skin from fillet (by regulation we must leave skin on when I fillet at sea)  2) cut into 6oz pieces (see pic below, a restaurant portion!) 3)take paper towels and squeeze out any moisture 4) place pieces in gallon zip lock bag 5) marinate for at least 6 hours or overnight (marinade to follow) 6) preheat grill to med high and grill for 6-7 minutes, (turn 90* for grill marks after 4 minutes) then another 5 on other side. The honey and sugar in the marinade causes the caramelization, so don’t leave it out. We love summer corn with Striper and usually serve with sautĂ©ed potato rounds underneath….Cheers!

Striped Bass Marinade

  1. 1/3 cup Soy Sauce
  2. 2 Tbl Sesame oil 
  3. 1 Tbl Canola oil
  4. 1 Tbl Honey
  5. 2 Tsp Sugar
  6. 2 Tsp Chopped Garlic
